1. Prepare the Apples:
- In a bowl, combine the diced apples with lemon juice, sugar, and cinnamon. Toss to coat evenly and set aside while you prepare the batter.
2. Make the Batter:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps in the batter are fine.
3. Combine Batter and Apples:
- Gently fold the prepared apples into the batter until they are evenly distributed.
4. Fry the Fritters:
- In a deep skillet or pot, heat vegetable oil to 350°F (175°C) over medium heat. Use enough oil to submerge the fritters.
- Using a spoon or ice cream scoop, carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan.

- In a bowl, whisk together powdered sugar, milk or apple cider, and vanilla extract until smooth and pourable.
- Dip each cooled fritter into the glaze, allowing any excess to drip off. Place the glazed fritters on a wire rack to set.

- Serve the Apple Fritters warm for the best flavor and texture. They are delicious on their own or paired with a scoop of vanilla ice cream or a drizzle of caramel sauce.
