INSTRUCTIONS:
- Step 1 – Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Step 2 – In a large mixing bowl, combine the cooked chicken, cooked rice, cream of chicken soup, chicken broth, frozen mixed vegetables, sour cream, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Step 3 – Transfer the mixture to the prepared baking dish, spreading it out evenly with a spatula.
- Step 4 – If desired, sprinkle breadcrumbs or crushed crackers evenly over the top of the casserole for added crunch and texture.
- Step 5 – Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and bubbly.
- Step 6 – Remove the foil and continue baking for an additional 5-10 minutes, or until the top is golden brown and crispy.
